We went to visit Rune, the founder of Kaffevaerk, in Copenhagen. He started roasting in 2006, experimenting with a small roaster, but you have to go back long time before Kaffevaerk was founded to find out where his passion for coffee comes from.
In the 1990s, he worked at Copenhagen airport, alongside his studies. In the airport coffee shop, he discovered what could be considered the first speciality coffees, the Blue Mountain from Jamaica or the Kona from Hawaii.
Today, Rune only selects certified organic coffees for Kaffevaerk. But his opinion on speciality coffee goes far beyond the question of labels.
